    Cajun Omelet

    Understanding the Cajun Omelette begins by peeling back the layers of Cajun cuisine itself. This robust gastronomy is a tapestry woven from the culinary traditions of the French Acadians, who settled in the bayous of Louisiana. Their unique blend of ingredients and cooking techniques draws from the bountiful local seafood, game, and produce, crafting dishes that truly reflect a cultural fusion. The Cajun Omelette is no exception, embodying the warmth of Southern hospitality and the kick of Creole spices.

    A well-crafted Cajun Omelette calls for sides and beverages that dance with its flavors. Leek and Sweet Potato Soup makes for an awesome accompaniment. For a lighter touch, a tangy Fresh Summer Salad can provide refreshment.

    Ingredients

    Serves: 4 Prep Time: 5 minutes Cook Time: 25 minutes

    • 8 eggs
    • ½ lb spicy sausage, casing removed
    • â…“ cup sliced mushrooms
    • ½ onion, diced
    • ½ medium bell pepper, diced
    • ¼ cup green onions, chopped
    • 1 Jalapeno pepper, seeded and chopped
    • 2 tablespoon water
    • 1 tablespoon Dijon or homemade mustard
    • Cooking fat
    • 1 pinch cayenne pepper
    • Sea salt and freshly ground black pepper to taste

    How to Make Cajun Omelet

    Fry the sausage meat in a large frying pan with some cooking fat. Set aside and reserve.

    Add some cooking fat to the pan and fry the mushrooms, onion, bell pepper and jalapeno pepper until the mushrooms are browned.

    Whisk the eggs in a bowl with the water, mustard and the spices. Season to taste with sea salt and freshly ground black pepper.

    Pour the egg mixture over the vegetables in the pan and add back the fried sausage meat. Gently stir until the top is nearly set.

    Fold the omelet in half and cook, covered, for another minute.
