    Creating the perfect cinnamon and apple omelet is as much a delight for the senses as it is a culinary adventure.

    Cinnamon and Apple Omelet

    Cinnamon and apple might bring to mind images of cozy fall desserts, but their melding in an omelet presents a tantalizing fusion of flavors that can be a surprising and welcome addition to any breakfast spread.

    A well-composed meal provides a variety of nutrients and tastes. Serve your cinnamon and apple omelet with a side of Paleo Banana Bread or a fresh Fruity Coleslaw and a steaming cup of your favorite breakfast tea. The contrast of temperatures and textures will make for a thoroughly enjoyable breakfast experience.

    Ingredients

    Serves: 1 Prep Time: 10 minutes Cook Time: 10 minutes

    • 3 eggs
    • 1 granny smith apple, peeled and thinly sliced
    • 3 tablespoon coconut milk
    • 2 tablespoon coconut oil, butter or ghee
    • ½ teaspoon cinnamon

    How to Make Cinnamon and Apple Omelet

    In a bowl whisk the eggs with 1 tablespoon of the coconut milk.

    Heat a non-stick skillet over a medium heat, add 1 tablespoon of the coconut oil, butter or ghee and cook the apple slices with the cinnamon until the apple is tender. Set the cooked apple aside and reserve.

    Add the remaining coconut oil, butter or ghee to the pan and pour in the egg mixture. Cook as a normal omelet, using a spatula to stir the omelet gently while it cooks and to allow uncooked parts to run underneath.

    When almost cooked, flip the omelet over and add most of the apple mixture and 1 tablespoon of the coconut milk.

    Fold the omelet in half, serve into a plate topped with the remaining apple mixture and 1 tablespoon coconut milk.
