- 1 tsp. cumin

- 2 tbsp. olive oil

- 1 cup chicken stock
- 2-4 tbsp. raw honey
- 4 garlic cloves, minced
- 1 tbsp. sriracha sauce
- Sea salt and freshly ground black pepper
Preparation
- Preheat the oven to 350 F.
- In a bowl, combine cinnamon, cumin, chili powder, and olive oil, and season to taste.
- Rub the pork tenderloin with the cinnamon-cumin mix and bring it to room temperature for 15 to 20 minutes.
- In another bowl, combine all the ingredients for the sauce.
- Melt some cooking fat in an oven-safe skillet over medium-high heat.
- Brown the pork on all sides for 1 to 2 minutes.
- Pour the sauce over and around the pork, and place in the oven.
- Bake in the oven for 20 to 22 minutes.
- Remove the loin from the pan and let rest for 3 to 5 minutes before slicing.
- Serve the pork with the sauce in the pan.
