    Halibut with Green Herb Sauce

Halibut holds a special place in the seafood world. With a history rooted in indigenous North American diets, it continues to be a staple in contemporary, health-conscious cooking. This flatfish offers a dense meat with a mild flavor that makes it ideal for a wide array of seasonings and cooking methods.

Green herb sauce, a bright and aromatic accompaniment, is the perfect foil to halibut with its fresh and vibrant flavors. A harmonious blend of parsley, mint, dill, and a hint of capers, this sauce adds not only an exciting taste but also a visual appeal to your dish. The combination of herbs alone provides an assortment of health benefits, including antioxidant properties and anti-inflammatory effects.

You're going to love having a big serving of halibut with a Cucumber and Carrot Salad or a kabob of Rosemary Scallop Skewers.

    • 6 halibut steaks
    • 12 anchovies, rinsed, spine removed and finely chopped
    • 2 tablespoon fresh parsley, finely chopped
    • 2 tablespoon fresh mint, finely chopped
    • 1 tablespoon fresh dill, finely chopped
    • 6 cloves garlic, minced
    • 2 tablespoon capers, rinsed and chopped
    • ½ cup extra-virgin olive oil

How to Make Halibut with Green Herb Sauce

Preheat your oven to 400 F.

Combine the chopped anchovies in a bowl with the chopped fresh herbs, sour pickles, garlic and capers. Season to taste with black pepper only.

Incorporate the olive oil in the mixture, mixing everything well together.

Season the halibut steaks to taste with sea salt and black pepper.

Heat an oven proof skillet over a medium heat and sear the halibut steaks on both sides for about 1 minute per side with some cooking fat.

Transfer the skillet to the top shelf of the preheated oven and cook for a further 6 to 8 minutes, until the fish is just cooked and opaque all the way through.

Serve the fish with the green sauce on top.
