    Mediterranean Grilled Chicken Recipe

    Bring home the flavors of the Mediterranean with mildly-spiced chicken in a cool, creamy dill sauce. Allspice, cardamom, and paprika add warmth to the chicken breasts.

    Mediterranean Grilled Chicken

    Nutmeg is typically more of a dessert spice, but give it a shot in a savory combination – just like cinnamon, it’s versatile enough to do both.

    Between the spice mixture and the grill, the chicken breasts turn out savory and smoky and ready to dip in a delicious sauce starring homemade mayonnaise, citrus, and fresh herbs.

    This recipe is a good one for the make-ahead fans; you can make the sauce while you set the chicken marinating and then not think about anything until it’s time to toss the meat on the grill and pull out your choice of sides. (As a make-ahead bonus, go for a chilled salad or another super-easy side that you can also throw together ahead of time)

    This chicken is an easy way to perk up the dinner rotation if you’re getting a little too much of the classic lemon/garlic/olive oil combo but still want something that goes well with just about any summer vegetables.

    Serve the chicken with the sauce inside a lettuce bun for a Paleo “chicken sandwich,” or try it with a quick side salad, grilled vegetables, or maybe just slices of fresh ripe tomatoes drizzled with olive oil and vinegar.

    Mediterranean Grilled Chicken Recipe

    Ingredients

    • 4 boneless skinless chicken breasts;
    • 8 garlic cloves, minced;
    • ½ teaspoon paprika;
    • ½ teaspoon allspice;
    • ½ teaspoon ground nutmeg;
    • ¼ teaspoon ground green cardamom;
    • 5 tbsp. olive oil, divided;
    • Juice of 1 lemon;
    • Sea salt and freshly ground black pepper;

    Ingredients for the dill sauce

    • 1 cup homemade mayonnaise;
    • 1 garlic clove, minced;
    • ½ cup fresh dill, chopped;
    • 1 tbsp. olive oil;
    • Juice of ½ lemon or lime;
    • Sea salt and freshly ground black pepper;

    Preparation

    1. In a small bowl, combine the paprika, allspice, nutmeg, cardamom, olive oil, lemon juice, garlic, and season to taste.
    2. Rub the chicken breasts with the spice mixture, making sure they are well coated.
    3. Let the chicken marinate for 2 to 12 hours in the refrigerator.
    4. In another bowl, combine all the ingredients for the dill sauce, season to taste, and refrigerate.
    5. Preheat your grill to medium-high heat.
    6. Grill the chicken on the preheated grill for 10 to 12 minutes per side.
    7. Serve the chicken with the dill sauce.
