- 6 eggs
- ½ cup cooked ground meat or bacon
- ½ cup diced green bell peppers
- â…› cup mayonnaise
- â…› cup water
- Sea salt and freshly ground black pepper to taste
- Cooking fat
How to Make Paleo Omelet Muffins
Preheat your oven to 350 F.
Grease 6 muffin tins with cooking fat.
Beat the eggs in a bowl and add the ground meat or bacon, bell peppers, water, mayonnaise and season to taste with sea salt and freshly ground black pepper. Combine well.
Scoop the mixture evenly in the 6 muffin tins and bake in the middle of the oven for about 18 minutes, until a knife inserted in the muffins comes out almost clean.
Remove from the oven, let cool a bit, remove from the tin and enjoy or store in the refrigerator for later.
