    Dark Chocolate Covered Bacon

    There are certain culinary alchemies that, when combined, create sheer magic. Standout among these unlikely unions is the tangy, savory flavor of bacon encapsulated in the sweet, bittersweet darkness of chocolate. It's a duo that might raise an eyebrow yet deserves the attention of any food lover eager to explore the indulgent and the unexpected.

    This dish is perfect when served as part of a Paleo Charcuterie Board or as an accompaniment for a Fresh Summer Salad.

    Ingredients

    Serves: 10 Prep Time: 5 minutes Cook Time: 15 minutes

    • 2 lbs thickly sliced bacon, cut in half
    • 1 lb good quality dark chocolate
    • 4 tablespoon coconut oil, butter or ghee

    How to Make Dark Chocolate Covered Bacon

    Fry the bacon until crisp in a hot pan. Fry in batches if your pan is too small to contain all the bacon slices at once.

    Remove the bacon from the pan and pat dry with a paper towel. Keep the rendered bacon grease for future cooking.

    Slowly melt the chocolate in a pot with the coconut oil, butter or ghee.

    Using tongs, dip the bacon slices in the chocolate.

    Place the chocolate dipped bacon on a cooling rack placed over foil or parchment paper.

    Let cool for about 2 hours, until the chocolate has hardened.

    Serve right away or store in a container in the refrigerator.
