    Zucchini Quiche

    Now for the star of the show—the zucchini quiche. This recipe marries the quintessentially creamy quiche filling with the refreshing taste of summer zucchini. Whether you're growing weary of your regular rotation of zucchini recipes or you're on the hunt for a new way to enjoy this versatile veggie, zucchini quiche is sure to impress your palate.

    Zucchini quiche sidles up beautifully with a variety of side dishes. A Radish and Cucumber Salad pairs remarkably well, cutting through the richness of the quiche. For a heartier meal, consider serving it with roasted Pecan and Sweet Potatoes.

    Ingredients

    Serves: 6 Prep Time: 10 minutes Cook Time: 45 minutes

    • 1 onion, diced
    • 12 eggs
    • 3 zucchinis, shredded
    • 3 green onions, chopped
    • 1 tablespoon fresh chives, chopped
    • Cooking fat
    • Sea salt and freshly ground black pepper

    How to Make Zucchini Quiche

    Preheat your oven to 350 F.

    Heat a frying pan over a medium heat and cook the onion in some cooking fat until soft. Season to taste with sea salt and freshly ground black pepper.

    In a bowl, whisk the eggs together and combine with the cooked onions, grated zucchinis, green onions and fresh chives. Season again to taste.

    Grease the interior of a baking dish with cooking fat and pour the egg mixture in.

    Bake the quiche in the preheated oven for about 40 minutes, until the edges are nice and brown and the center in no longer runny.
