    Grain Free Granola

    To truly understand grain-free granola, it's essential to become familiar with the ingredients that replace the traditional grains. Nuts and seeds are the heroes of this story, providing the bulk and the crunch. Dates, coconut and raisins provide the sweet deliciousness to offset the inherent nutty flavor, making for a perfect hiking snack.

    Use your grain-free granola to top off Fruit Salad with Mint and Lime or as a crumble on Paleo Coconut Vanilla Ice Cream for a healthier dessert option.

    Ingredients

    Serves: 16 Prep Time: 10 minutes and 8-12 hours Cook Time: 10-12 hours

    • 6 cups good quality assorted nuts  (pecans, almonds, walnuts, sunflower seeds, pumpkin seeds and macadamia nuts are all great choices)
    • 1 cup shredded coconut
    • 1 cup pitted and chopped medjool dates
    • 1 cup raisins

    How to Make Grain Free Granola

    Soak the nuts overnight in warm water and a tablespoon of salt;

    Drain the nuts and spread them evenly into a baking sheet.

    Place in a 110 F oven for 10 to 12 hours to dehydrate. If your oven temperature doesn’t go that low, put it on its lowest temperature and keep the door ajar.

    After the nuts have dehydrated for at least 10 hours, chop them roughly and place them in a bowl with the coconut, dates and raisins and mix well.

    Keep the prepared granola in an airtight container.
