    • 1 lb beef chuck roast
    • 3 cups sweet potatoes
    • 2 garlic cloves
    • Allspice
    • Bay leaf
    • 1 cinnamon stick
    • 1 large onion
    • 1 can (28 oz) tomatoes
    • 8 dried apricots
    • Fresh parsley
    • Cooking fat
    • Sea salt and freshly ground black pepper

    How to Make Slow-Cooker Beef And Sweet Potato Stew

    Cut the beef roast into 1" cubes, and then season with salt and pepper. If desired, you can add additional seasonings. Then, melt the cooking fat in a skillet over medium heat, and add the beef. Brown this for 2 to 3 minutes, then remove and add to the slow cooker.

    To the beef in the slow cooker, add the sweet potatoes, garlic, cinnamon stick, onion, tomatoes, and allspice. Cook on low for 8 hours until the beef is fork tender.

    For added flavor, include dried apricots in the crock pot during the last 20 minutes of cooking. Cook on low, covered, for another 20 minutes until apricots are soft.

    Remove the bay leaf and cinnamon stick. Sprinkle with chopped parsley before serving.

    • 2 lbs pork shoulder
    • 2 onions
    • 1 cup chicken broth
    • 2 tablespoon tomato paste
    • 2 bell peppers
    • ¼ lb ham
    • 10 cloves garlic
    • 1 teaspoon paprika
    • 1 teaspoon dried thyme
    • ¼ teaspoon red pepper flakes
    • 1 orange
    • 2-4 tablespoon cooking fat
    • Salt and black pepper

    How to Make Basque Pork Stew in a Slow Cooker

    Start by preparing your meat and vegetables. Once the pork is cubed, season it with salt and black pepper.

    Then, melt the cooking fat in a skillet, and brown the pork for 3 to 5 minutes. It will not be cooked through. Remove from the skillet and place into the slow cooker.

    Add the onions to the same pan, and cook for 5 to 7 minutes, until translucent.

    To the onions, add the chicken broth and tomato paste. Whisk this together and bring it to a boil. Then, pour the mixture over the pork in the slow cooker.

    Add the orange zest and flesh, bell peppers, ham, garlic, paprika, thyme, and red pepper flakes. Add salt and pepper "to taste". I start with ½-1 teaspoon each and add more later.

    Cover and cook on low heat setting for 6 to 8 hours.

    Slow Cooker Rabbit

    Rabbit, often overlooked as a protein source, is low in fat and high in protein, making it an ideal choice for paleo and keto diets. Some may worry about keeping the meat moist and tender - a challenge that slow cooking in the marinade and broth helps overcome. This dish is a great way to incorporate rabbit meat into your diet in a new and delicious way.

    Ingredients

    Serves: 2 Prep Time: 30 m 4 hrs in + Cook Time: 4 hrs

    • 2 lbs rabbit meat
    • 1 onion, roughly chopped
    • 2 cloves garlic, minced
    • 1 bay leaf
    • 1 ½ cups red wine
    • 2 sprigs fresh thyme, leaves picked
    • 1 sprig fresh rosemary, leaves picked
    • 1 tablespoon crushed Juniper berries
    • 2 cups dried Porcini mushrooms
    • Cooking fat
    • Freshly ground black pepper to taste
    • Fresh parsley for garnishing

    How to Make Slow Cooker Rabbit

    Begin by creating a marinade. In a large bowl, add the onion, garlic, bay leaf, thyme, rosemary, Juniper berries, and wine. Stir and then add in the rabbit pieces. Cover and refrigerate for 4 hours.

    Remove the rabbit from the marinade and pat it dry. Then, melt the cooking fat in a large skillet. Add the rabbit and sear it for 1 to 2 minutes on all sides, just until it is browned. Then, transfer the meat to the slow cooker.

    Deglaze the skillet with the remaining marinade liquid. Once all food bits are scraped up and it is simmering, pour this over the rabbit in the slow cooker.

    Put the slow cooker on high and cook for 1 hour.

    While the rabbit cooks, put the mushrooms into 1 cup of boiling water to soak for 1 hour. Then, drain the mushrooms and pour that liquid into the slow cooker. Continue cooking for another 2 hours.

    After 2 hours, remove the rabbit from the slow cooker and strain the liquid. Then, add the rabbit back to the slow cooker with the now strained liquid. Roughly chop the mushrooms and add them to the slow cooker with additional salt and black pepper. Cook for another 1 hour.

    For extra richness, add additional cooking fat in the last hour of cooking.

    • Remove the rabbit but reserve the marinade. Pat the rabbit dry then sear the rabbit in a pan for just 1 to 2 minutes per side until browned. Then add to the crockpot with the marinating liquid. Cook on high for 1 hour.

    • While this cooks, soak the mushrooms in hot water for 1 hour. Drain the mushrooms and set them aside, but pour the liquid back into the slow cooker and continue cooking for another 2 hours.
      2 cups dried Porcini mushrooms
    • Remove the rabbit from the slow cooker, and strain the liquid. Return the rabbit, chopped mushrooms, and strained liquid to the slow cooker. Continue to cook for 1 hour. For added richness, add more cooking fat to the slow cooker.
      Freshly ground black pepper
    • Garnish with parsley before serving.

    Notes

    1. Fresh rabbit can be found at many butchers, but you can also hunt in some local areas or check with local farmers who may raise them for meat. 
    2. This recipe is also excellent for goat to help tenderize the meat.

    Perfectly seasoned and slow-cooked to perfection, this slow cooker beef stew is guaranteed to leave you feeling satisfied and full of energy. With tender cubes of beef, savory mushrooms, and a medley of fragrant spices, this dish is a feast for the senses.

    A classic beef stew is paired with cabbage, a cruciferous vegetable that is high in fiber and low in calories, as well as carrots, which provide a natural dose of sweetness and nutrients, this dish is perfect for those following a paleo or keto diet.

    Ingredients

    Serves: 6 Prep Time: 20 min Cook Time: 7 hrs

    • 3 lbs beef chuck, cut into 1-inch cubes
    • 1 medium onion, chopped
    • 6 fresh shitake mushrooms
    • 3 garlic cloves
    • 1 can (14 oz.) chopped tomatoes or 3 fresh tomatoes, chopped
    • 4 carrots, cut into 1-inch pieces
    • 3 cups beef or chicken stock
    • 1 cup red wine
    • ½ head cabbage, coarsely chopped
    • Cooking fat

    How to Make Slow Cooker Beef Stew

    Cut the beef into cubes, then add lemon juice, salt, and black pepper to the meat. Toss to season.

    In a skillet, melt cooking fat over medium heat. Add the beef cubes to the skillet and cook for 5 minutes, stirring regularly to brown all sides. Remove from the pan and place into your slow cooker.

    Now, add more cooking fat and the cabbage. Cook this, stirring occasionally, until softened. Season with salt and black pepper to taste. Remove and add to the slow cooker.

    Now, add in the last of the cooking fat to the pan. Add in the onions and mushrooms, and cook these for another 5 minutes. Add in the garlic and cook for 2 more minutes.

    Pour these into the slow cooker with the beef and cabbage. Then, add in the wine, carrots, tomatoes, and both. Add salt and pepper if desired.

    Cook this on low for 6 hours. Before serving, taste and add salt or pepper if needed.

    • 3 lbs beef chuck cut into 1-inch cubes

    Instructions
     

    • Start by cutting the beef into bite-sized cubes. Then, combine the beef cubes with lemon juice, salt, and black pepper, giving it a good toss to evenly season.

    • In a skillet, melt cooking fat over medium heat. Add the seasoned beef cubes and cook for about 5 minutes, stirring occasionally to achieve a nice browning on all sides. Once done, transfer the browned beef cubes from the skillet to your slow cooker.

    • Next, in the same skillet, melt more cooking fat and add the cabbage. Cook, stirring occasionally, until the cabbage turns tender. Season with salt and black pepper to your liking. Once softened, remove the cabbage from the skillet and add it to the slow cooker.

    • Using the remaining cooking fat, sauté the onions and mushrooms in the skillet for another 5 minutes. Add the garlic and continue cooking for an additional 2 minutes.

    • 1 ½ cups mushrooms, sliced

    How to Make Chicken And Mushroom Slow Cooker Stew

    For this recipe, you will want to brown the onions and chicken before adding to the slow cooker. You can put everything in and let it cook from a raw state, but I like the flavor that comes from browning first.

    Heat a large skillet over medium heat. Add some cooking fat to the skillet Once melted, add the chicken pieces, sliced onions, and sliced mushrooms to the skillet. Stir occasionally and cook for about 8 minutes or until the chicken is slightly browned and the onions are translucent.

    Transfer the chicken and vegetable mixture to your crock pot. Add the diced tomatoes, butternut squash cubes, minced garlic, and bay leaves to the crock pot. Season to taste with salt and black pepper.

    Stir to combine, then cook on low for 6 to 7 hours. Once done, taste, and season more if needed.

    Note: While the vegetables and chicken will add some liquid naturally, you may want to add a bit of bone broth to add moisture and more of a soup style to the dish.

    If you’re buying a pre-prepared ham at the grocery store, be very vigilant about the ingredients; often they’re made with all kinds of junk (and then bulked up with water to sell less ham for more money, which is a ripoff and also gives you much less flavorful meat).

    There is something to be said for the joy of entering your home at the end of a long workday, with glorious aromas emerging from your kitchen, and magically: "Dinner is ready!" Perhaps it is not an act of sorcery, but rather that of preparedness, but either way, it feels great to be ahead at least one meal in life.

    Spicy Slow Cooker Beef Stew

    In the colder months, a slow cooker may become your best cooking buddy. You lovingly toss all the ingredients in the basin and let it go to work while you get out enjoying life.

    When you are busy, it is an absolute lifesaver - not only can you make dinner for tonight, you can make a larger batch and freeze some portions for later.

    When choosing a piece of protein-rich boneless beef chuck, know that it is often the tougher cuts of beef that work the best for slow cooking.

    Whereas it wouldn't be very tasty on the grill (think tough leather), it is wonderfully tender when combined with beef stock, tomatoes, spices, and coconut aminos cooked for several hours, that is.

    With time and heat on your side, the collagen in the beef breaks down into beneficial gelatin, making for rich and succulent pieces of meat, along with an excellent, healing broth.

    We like to serve Paleo chili over a generous dollop of sweet potato and rutabaga mash, though Hasselback potatoes with sour cream make a delightful addition to the meal as well. Or make that a Hasselback sweet potato... Either way, it is going to taste amazing.

    To really give the chicken its flavor, the recipe calls for some pre-made salsa. You can use any salsa that you like, but this fire-roasted salsa is perfect if you don’t have other plans: the flavor is rich and intense without being overwhelmingly spicy, and if you have any leftovers, you can always eat them over salad or any kind of grilled meat.

    The beauty of a slow cooker is the freedom to leave it on all day and come back to dinner, but if you want your chili faster, you can always cook it on high for 3-4 hours instead of on low for 6.

    In honor of the slow cooker, here’s yet another recipe for it: a creamy, savory soup full of sweet potatoes, velvety chicken stock, and plenty of aromatics. If you want it for dinner, put it in while you’re making lunch and cook on low; if you want it for lunch, put it in at breakfast time and cook on high.

    Of course, you could also make it on the stovetop: just bring it to a boil, reduce it to a simmer, and cook until the sweet potatoes are soft.

    This soup is another one that plays very nicely with restricted diets. It’s autoimmune-friendly, exactly as written, and if you make it with vegetable stock, it’s vegan as well.

    To make this into a light lunch, all you really need is some protein and a little extra fat (and maybe some more vegetables).

    Here’s a meal with all the convenience of a stir-fry but re-imagined as a hearty slow-cooker soup for extra comfort-food value.

    Plenty of tomatoes and homemade bone broth give it a rich, flavorful base, and the peppers and cauliflower add some nice body even without the beef. Try some multicolored peppers for a nice visual effect, too: the bright colors are beautiful in contrast with the rest of the soup.

    If you want it faster, you could easily convert this one to a stovetop meal instead of putting it in the slow cooker. Just brown the beef and vegetables as directed, and then transfer them to a pot on your stove. Bring to a boil, reduce to a simmer, and cook until the vegetables are tender.

    The reason for using extra-lean beef here isn’t because beef fat is bad for you; beef fat is excellent for you! But cooking fatty ground beef in soups tends to leave an unpleasant layer of fat floating on top – it’s got a really off-putting mouthfeel.

    If you only have fatty ground beef, you can get around this by cooking the soup, refrigerating it, so the fat floats to the top and hardens, and then scraping off the hardened fat before reheating the soup and eating it.

    That’s a pain, though; it’s much easier to just start with lean beef and add some other source of healthy fat to your meal, maybe with some avocado slices or olives.

    Nobody knows for sure who made the first Sloppy Joe, but over the years, they’ve become a favorite picnic lunch, campfire dinner, and hollow-leg-filler for anyone with a powerful appetite.

    So here's a Paleo recipe for enjoying that perfect mix of meat and tomato sauce, minus all the junk that you'd otherwise get in the ketchup and the barbecue sauce (not to mention the bread).

    Slow Cooker Sloppy Joes

    You won’t be eating Paleo Sloppy Joes between two buns, but that doesn’t mean you have to just eat the beef mixture out of the bowl!

    Of course, you could just serve your meat on top of a pile of coleslaw and dig in – but if you’re looking for something a bit more traditional, here’s a list of Paleo-friendly serving ideas:

    • Spoon the beef over a roasted Portobello mushroom cap (or roasted eggplant rounds) to make open-faced “sandwiches.”
    • Stuff bell peppers, tomatoes, or other vegetables with the beef mix, and roast until the outer vegetable is soft and tender.
    • Serve a generous helping of beef over some sweet potato fries or butternut squash fries.

    To make a satisfying meal without the bread, I’ve added more vegetables than usual to the meat, but you can modify this in either direction, depending on what you’re hungry for. If you can’t get enough of the veg, just add some more: carrots, celery, and zucchini would all be good options.

    On the other hand, if you’re in a more carnivorous mood and just want the meat, you can leave out the vegetables entirely. However you make it – and however you serve it – it’ll scratch that itch for something thick and hearty, Paleo-style.

    Come home, pop it in the slow cooker, then take off for an hour or two and come home to dinner all ready and waiting.

    The pork chops get some flavor here from a simple beef broth thickened with Paleo-friendly flour. Arrowroot and tapioca flour might not be terribly familiar, but both of them are perfectly Paleo – they’re made from roots, not from grains.

    Neither is particularly nutrient-dense, but that’s why you’re using them to thicken a sauce and not as a primary source of calories.

    The extra sauce here would taste pretty good dripped over a pile of mashed potatoes (yes, potatoes or substitute cauliflower or celeriac or any number of other vegetables if potatoes aren’t your style). With all that delicious beef broth in there, don’t just throw it down the sink!

    “Pulled chicken” doesn’t quite have the same ring to it as “pulled pork,” but that’s OK: you’ll be too busy enjoying the taste of this recipe to care much about what it’s called.

    Plenty of homemade bone stock keeps the chicken breasts from drying out, and a generous amount of hot sauce gives them as much (or as little) spice as you like.

    And using the slow cooker is nice in the hotter months since it doesn’t heat up the kitchen nearly as much as the oven would.

    Finding a reasonably junk-free hot sauce in the grocery store shouldn’t be too much of a production, but if you can’t find one, or if spicy just isn’t your style, you could easily swap out the hot sauce for some homemade BBQ sauce.

    This would be great for lunch, rolled up in some lettuce wraps or served inside a baked potato (yes, white potatoes are fine) or sweet potato for a heartier meal.

    Or you could get even more creative and stuff it inside cherry tomatoes like the picture for this recipe: that would make a cute appetizer.

    It would also be convenient for taking to a potluck or some other occasion where you want a generous amount of crowd-friendly food without having to spend hours the day before prepping it all.

    Chicken is one of the most familiar meats to cook, and slow cooking is one of the easiest methods of taking anything from raw to dinner – put them together, and you’ve got a basic recipe for super-easy food with almost no work.

    The key here is to find chicken with the skin on – don’t go for the skinless breasts here. For one thing, the skin adds flavor, and why would you ever pass up on chicken skin when you could be eating it?

    But for slow-cooking, it’s particularly important because the fat helps keep the meat tender while it cooks. Nobody likes dried-out, stringy chicken, and skin-on cuts are much less likely to end up that way, even if you cook them a little longer.

    Other than finding a skin-on chicken cut, there’s not much to worry about here; that’s the magic of the slow cooker. Raw meat and spices go in; dinner comes out. The onions give you an aromatic base and also prevent the chicken from sticking to the bottom of the pan.

    Put it in for lunch or dinner, or just turn it on as you’re doing meal prep for the week, and when you’re done with all your other prep, you’ll also have a bunch of easy-cooked chicken that you can add to salads, stir-fries, or other meals as necessary.

    A Paleo lasagna dish that’s easy to prepare – it may not sound possible! But with some nifty Paleo substitutions and the use of your slow cooker, you too can enjoy this amazing Paleo-Italian dish.

    Instead of dealing with the long layering and baking process of a traditional lasagna casserole, you’ll be using layers of eggplant, zucchini, and Italian sauce in your slow cooker, setting it up for the day, and returning to a delicious and hearty meal.

    We really do believe that Paleo shouldn’t be about giving up, and we think this recipe does such a great job of combining the needs of the Paleo diet and the simplicity of a quick weeknight meal.

    Slow Cooker Beef Zucchini Lasagna

    In this dish, you’ll be using some of our favorite noodle replacements in lieu of sheets of lasagna – eggplant, and zucchini.

    Both of these veggies are awesome for a ton of reasons: Eggplant works well in any Italian meal (just make sure to sweat your eggplant if you prefer it drier), and zucchini is a perfect zoodle with a good amount of Vitamin C.

    Since you’ll be cooking these in your slow cooker, definitely slice these a bit thicker than you might for a casserole – the long cook time can make these a bit too limp otherwise.

    One of the benefits of a slow cooker meal is that there isn’t really a need to add other dishes, but if you are looking to fill up your plate a bit more, try adding a dish like this Italian chopped salad.

    Spaghetti - it brings up visions of long strands of glutenous pasta dripping with tomato sauce... however, the spaghetti here is the squash version, and it is extremely filling, satisfying, and nourishing to boot.

    The great thing about slow cooking is that you can start dinner in the morning and have food ready for when the end-of-the-day hunger rolls around.

    The chicken breasts can be cooked on low heat for 6 to 8 hours along with peppers, mushrooms, and tomatoes while you are at work - and once you get home, you can toss that spaghetti squash straight in the oven.

    As the weather gets cooler, you will begin to find spaghetti squash at your local market, as well as at larger grocery stores. It is harvested in early fall, and - like other hard-shelled winter squashes - it will keep throughout the winter and spring if it is stored in a cool location.

    It is a beautiful vegetable with a creamy yellow outer skin, and while it is certainly a great alternative to pasta (carb and grain-freeness wise), you may also be pleased to know that you can eat it raw in salads and the seeds are edible too - perfectly roasted with just a hint of paprika and salt.

    If you can still find tomatoes fresh from the vine, then a balsamic tomato and onion salad make a wonderful accompaniment. If it is later in the season, then a pear salad with honey-citrus vinaigrette will match nicely too.

    In the colder months, our slow cooker is working overtime, as we truly enjoy coming home in the evenings to a wonderful meal of braised, shredded beef that is deliciously falling apart and tender.

    Maybe it is just us, but the simplicity of it all makes us wonder why people even go out to eat when it is so effortless to eat well at home. All the flavors in the world are available to us nowadays, so let's take the best of what we know and toss it into the slow cooker!

    Cuban-style beef has no secrets, none that we are aware of anyway, unless you consider that the key to a successful ropa vieja is a delicious grass-fed flank steak. When consuming meat, always source the best that you can find and afford and remember that organic does not mean grain-free.

    That being said, you can still eat Paleo, even when you can't afford grass-fed meat. If you are using your slow cooker, you can even choose cheaper cuts of meat and simmer them long and slow for tender and juicy bites.

    Buy in bulk, support a CSA, and purchase directly from a farmer - there is always something you can do to support good farming practices and your bountiful health.

    Add some Paleo sour cream, fresh cilantro, steamed vegetables, cauliflower rice, or your favorite greens on the side. As long as you are in good company, this dinner will most certainly go down a treat.

    • 2 lb. beef chuck roast or flank steak
    • 4 garlic cloves, minced
    • 2 cups tomato sauce
    • 2 bell peppers, sliced

    • 2 tsp. fresh cilantro, minced
    • 1 tbsp. ground cumin
    • 1 cup beef stock

    Recipes for comfort food are inescapable as you browse online for the next dinner inspiration. You'll see carrot cake with whipped cream, followed by loaded sweet potatoes, and who knows what will slide by next as you are dutifully scrolling down.

    Most of them are non-Paleo recipes, to be sure, but that gives us, Paleo cooks, the chance to show off our cookery skills and surpass the other recipes with creativity and unique flavor combinations.

    The next time you score a bundle of green beans, two pounds to be more exact, into the slow cooker, they go - washed and ends trimmed, of course. Then a good amount of bacon enters your trusty skillet, aromas arise, and finally, the rest of the ingredients join the beans in the slow cooker.

    Skip the processed sugar and use honey instead, if you even need it at all. Forget the Worcestershire sauce and sprinkle on some coconut aminos. And go for your favorite BBQ sauce with Paleo-approved ingredients, homemade or not.

    Absolutely delicious. There are plenty of words to describe this slow-cooked pot of beef with mushrooms, onions, beef stock, and coconut gravy... but the first words out of your mouth upon sampling this dish just may be the very thing we said here.

    Maybe you will love it so much, that you will take your leftovers to work, just to show off how well you can create an overnight masterpiece in the kitchen.

    With the right cut of beef, this roast is going to be incredibly tender and drool-worthy; think of the best boeuf Bourguignon you have ever had. Choose an ample-sized boneless chunk of beef, approximately a 2 lb. chuck, or a round roast.

    The time of year does not matter, nor does the time of day - when this honey and garlic chicken with vegetables is done simmering for 6-8 hours, all you need to do is serve yourself a bowl, allow it ample time to chill, and dig in.

    It really doesn't matter if it is for breakfast, or lunch at work; just enjoy it for all the spoon- or forkfuls it is worth. See, there we go, not caring again!

    If you are cooking for a smaller crowd with diverse tastes, or for some sensitive eaters, everyone will find a bite that they love in here, and although the asparagus will surprise some people at the first bite, all will be well in the end.

    After all, if you have consumed beef pho, at home or abroad, and found it irresistibly amazing, then let adventure run wild and see where it takes you - somewhere along the way, you are even bound to end up with an enticing baking dishful of Indian-style lemongrass chicken.

    This particular recipe calls for chicken pieces. What you do with that is entirely up to you, though we do suggest slow cooking a combination of legs and thighs, with the skin on.

    While most traditional African chicken stew recipes would call out for peanut butter, ½ a cup or more, you can skip that part since it is a non-Paleo ingredient. If you desire a thicker stew, you could add some almond butter or chop up and add a medium size sweet potato instead.

    And if you want to toss in a little heat, go right ahead with a generous sprinkle of cayenne, or dice up some sliced hot peppers.

    • 3 to 4 lbs. chicken pieces
    • 4 to 5 Roma tomatoes, chopped
    • 4 carrots, sliced
    • 3 to 4 green onions, sliced
    • ½ cup tomato sauce
    • ½ cup chicken stock
    • 3 garlic cloves, minced
    • ½ tsp. cumin powder
    • 1 tbsp. paprika
    • 1 tsp. dried thyme
    • Cooking fat
    • Sea salt and freshly ground black pepper

    1. Melt some cooking fat in a skillet over high heat.
    2. Season the chicken pieces to taste.
    3. Brown the chicken in the skillet on all sides; about 2 minutes per side.

    5. In a bowl, combine the diced tomatoes, tomato sauce, chicken stock, garlic, cumin, paprika, thyme, and season to taste.

    Hearty and delicious, with whispers of cinnamon and thyme, this stew will surprise you with the uncomplicated flavors of the hard-working and humble past. It is a bit of time travel, going back to Grandma's kitchen, yet the results of your not-so-hard work (using the slow cooker) are here and now.

    Like in so many slow cooker recipes, you must brown the meat first. Trust us, it just tastes better that way. You also need to chop up your veggies to any size that you like. Go rustic and leave them whole, or halve them if you must. Make them bite-size for easier spoonfuls of stew - the choice is yours to make while you spend as little or as much time on meal preparation.

    Let's talk about rutabagas. They are a thing of beauty and wonder to some of us who have never seen them before - rutabagas are also called swedes (Swedish turnip) or neeps. While we generally think of it as fodder for livestock, it is perfect for human consumption and a wonderful vegetable for adding to stews.

    They are a culinary treat when boiled and mashed with sweet potatoes, carrots, and ghee, and in other parts of the world, they are often served alongside sausages. We'll take that as a positive sign that they belong in our Paleo meals!

    The beauty of slow cooking is that you prep your ingredients, then go to work, or just take life in. Easy as pie, almost like Grandma used to make.

    Slow Cooker Beef And Rutabaga Stew Recipe

    Ingredients

    • 2 lbs. beef chuck roast, cubed
    • 1 rutabaga, cubed
    • 2 carrots, sliced
    • 2 sweet potatoes, cubed
    • 2 celery stalks, sliced
    • 1 onion, diced
    • 2 garlic cloves, minced
    • 4 cups beef stock
    • 2 tbsp. balsamic vinegar
    • 2 tbsp. fresh rosemary, minced
    • ½ tsp. dried thyme
    • ½ tsp. ground cinnamon
    • Cooking fat
    • Sea salt and freshly ground black pepper

    Preparation

    1. Add all the prepared vegetables to a slow cooker and season to taste.
    2. Melt cooking fat in a skillet over medium-high heat.
    3. Season the meat cubes to taste with sea salt and freshly ground black pepper.
    4. Brown the beef cubes, on all sides in small batches, 1 to 2 minutes per side. Then add the beef to the slow cooker.
    5. Deglaze the pan with the balsamic vinegar, pour in the beef stock, add the rosemary, dried thyme, and ground cinnamon, and season to taste.
    6. Pour the sauce into the slow cooker, cover, and cook on low for 6 to 8 hours.
    7. Adjust the seasoning and serve.
